White Rabbit Hospitality creates and operates bespoke Food & Beverage spaces within hotels. We're launching a brand new multi-outlet hotel destination in the heart of London's most dynamic district, and we're looking for an exceptional Food & Beverage Operations Manager to join us from the ground up.

What Will You Be Doing?

You'll be the operational heartbeat of this exciting new project — leading F&B across multiple outlets, building something from scratch, and setting the standard for everything that follows.

  • Lead daily F&B operations across all hotel outlets including restaurant, bar, room service, and events, owning every detail of the guest experience.
  • Drive revenue and manage the P&L, including labour costs, stock control, GP margins, and cost efficiencies across all outlets.
  • Recruit, onboard, develop, and inspire a diverse FOH team, building a genuine hospitality culture from day one.
  • Implement brand-aligned steps of service, SOPs, and guest experience standards that will define the operation for years to come.
  • Collaborate closely with the Executive Chef and culinary leadership team on menus, seasonal activations, and cost control.
  • Lead pre-opening planning, rotas, SOP documentation, supplier onboarding, and training frameworks built your way.
  • Manage supplier relationships, ordering processes, and inventory control to maintain quality and efficiency.
  • Monitor guest feedback, review performance data, and drive a relentless culture of improvement.
  • Champion a people-first culture that reflects White Rabbit Hospitality's values and entrepreneurial spirit.

What Do You Need?

  • Proven experience as an F&B Manager or Operations Manager within a multi-outlet hotel, resort, or large-scale hospitality environment.
  • Strong commercial awareness with demonstrable experience managing P&L, labour costs, and operational KPIs.
  • A track record of building, developing, and leading high-performing FOH teams.
  • Excellent communication skills, confident working with both front-line teams and senior stakeholders.
  • Experience in pre-opening or new concept launches (desirable but not essential).
  • Knowledge of EPOS systems, reservation platforms, and F&B technology (desirable).
  • A genuine passion for food, drink, and creating memorable guest experiences.
  • Right to work in the United Kingdom.
